Corn-Mac with Bacon
Mexi-Chicken and Beans – A delicious recipe for the whole family to enjoy!
Kick-start your day with this fun and filling corn chowder. Such an easy recipe for a great lunch!
Before serving, fluff with a fork and fold in cilantro. Plate up with a quarter of a lime on the side of each serving.
This is a favorite anytime of year, we use it as a simple side during grilling season and have added to our holiday menu.
- 2 Cups uncooked rotini noodles (16 ounce box)
- 2 Cans Whole Kernel Corn
- 2 Cans Creamed Corn
- 16 Ounces Velveeta Cheese, cubed
- 1 Cup butter, not margarine (2 sticks)
- 8 Slices of thick cut smoked bacon, cooked and crumbled
Place all ingredients in crock in order given.
Cook on LOW for 3 to 4 hours, stirring occasionally.
Turn slow cooker to warm until ready to serve. When ready to serve add crumbled bacon.
