When we found this recipe we knew it would be a hit with our families... coke with a roast?!?! You bet! The roast turns out SO tender and falls apart when removing it from the slow cooker. This dish was so delicious served with a loaded baked potato (which we cooked in the crock by poking holes in them, rubbing with olive oil and kosher salt, wrapping them in foil, and cooking covered on high until soft... about 4-5 hours) and a side salad! We hope you enjoy this dish as much as we did! It is definitely a repeat recipe in our house!
Used 6-quart slow cooker
Ingredients
- 3-4 Pounds Rump Roast
- 1 Garlic Clove, Minced
- 1 Onion, diced
- Olive Oil
- 1 Can Golden Mushroom Soup
- 1 Package Onion Soup Mix
- 1 Can Coke
- 16 Ounces Sour Cream
Directions

Step One
Cut slits into your roast and stuff with onion and garlic.

Step Two
Brown roast in skillet and place in your slow cooker.

Step Three
Mix golden mushroom soup and onion soup mix. Pour over the roast.

Step Four
Next add your coke, cover, and cook on high for 4 hours.

Step Five
Remove roast and slice. Add sour cream to liquid and whisk until mixed.

Step Six
Return the roast to the slow cooker and cook another 2-2.5 hours on high.

This roast was DELICIOUS! I chopped a whole onion and put it in the bottom of the crock pot (instead of inserting some onion into slits in the roast), and used 2 extra cloves of garlic, but otherwise used the directions and ingredients as written and to date this is the best recipe I have made in my slow cooker! I served it with mashed potatoes and some steamed broccoli and got rave reviews from husband and daughter! I WILL be making this again, and again! Thank you for sharing your recipes with us!

We find cookin’ our roast on low and slow is best. They come out super tender that way. And maybe you crock cooks hot. Some of them out there do and will dry out or burn your food if you cook them on high or too long int he crock. That’s why we like the 6 quart GE non-stick crock from Walmart. It doesn’t cook hot at all.

Hi! I’m new here, and I just tried this roast today. My first question is how do you get all the chopped up onion in the slits of the roast before you brown it?? I used a small onion, and found it nearly impossible to fill in the slits…there was a ton of side onion. It didn’t say in the directions or the video how this was done. How big are the slits supposed to be and how many of them? Do you use all the onion? My next question, is how long do you let the roast brown? I got a rump roast, and I followed the directions…I had it on high for only about 3 hours, and I just checked it. It is almost done already and SUPER hard to cut and dry. I don’t know where I went wrong. I was expecting it to fall apart and be very moist, but it was the exact opposite and I don’t know if it will be edible anymore. I’ve added the sour cream and have it on low…I’m HOPING that it will somehow get more moist, but I highly doubt it. I added everything as the directions stated and poured a Dr. Pepper on top. What did I do wrong? Any advice? The roast is extremely rough right now….

Hi there! I’m making this for the first time tonight. Unfortunately, my baby took a marathon nap (or, fortunately?!), and I wasn’t able to get to the grocery store until around 12:15. I added all the ingredients and started cooking it around 1:15. After the first 4 hours (and adding sour cream), do I have to cook for another 2 hours or can it be cut down to 1 hour? It’s a little over a 3 pound rump roast. We have family coming around 6 to eat and I’d hate for them to wait over an hour to eat. THANKS!! Can’t wait to try it! :)

It is not Cream of Mushroom. You can find a can of Golden Mushroom in the soup aisle.

Lisa, you will want to mince the garlic clove (one section) and stuff it into the slits in the roast. If you want, using 2 or 3 cloves will be acceptable. Using a whole bulb will be too much.

Jennifer, We have used frozen roast with no problem. If you sear the meat first, you will want to defrost it.

Hey this sounds really good. I just have a couple questions. First the soup (1 Can Golden Mushroom Soup), is that Cream of Mushroom? Ooops I geuss there’s just one question.

I fear this question may sound silly, but I was taught that garlic, as it is purchased in the store, is called a bulb, and a garlic clove was a section of the bulb. A single clove is what fits into the mincer. However, I’m wondering if a single clove is enough to season this dish. Should I use just the one garlic clove, as the recipe states, or should I use a whole bulb and insert several cloves into the roast?

I’m pretty sure I made the slices WAY too big/deep for the onions and garlic ~ but, I think it will work.
I’m probably going to add corn starch to the sauce (as one person commented) to mae it a little thicker – we’ll see…in 4 hours =)

Gina, unfortunately this is something we’ve heard a lot of (and experienced!). We set up a little test kitchen…check it out. Next time you make a roast, crock it on LOW but check it at the same time as you would if you were crockin’ on HIGH. I have loved all the recipes I have tried but I had a problem with this one. I followed it to a “T” until after the 1st 4 hours. I removed the roast to add the sour cream and it seemed tough. The thermometer said 170 degrees so I did NOT cook it another 2 hours. After I sliced it and tasted it, it was very dry and tough. I used a 4 lb rump roast, and 8 qt Crock Pot brand crock pot. Since I bought it every pot roast I have made (usually chuck roast or bottom round) turns out tough. I am thinking it is the crock pot. Have you heard of other people with this crock pot having problems?

I forgot to brown the roast this morning. Is it going to still turn out ok? I was in such a rush trying to get to work and it was before 7am so I am sure I was half asleep. I also left the soup mix, onion/garlic mix on the top of the roast was this right?

If your crock cooks hot, Shannan, then you may not need to cook your meat as long as we did. I would reduce the time next go around. Just check the internal temp of the meat…make sure it reaches 145 degrees. :)

I’m getting ready to make this for tonight’s dinner and I’m a bit confused on the directions. In the video you say to cook for another 2 to 2 1/2 hours on high after you take out the roast and add the sour cream. But, in the print directions it says to cook for 1 hour on high. I don’t want to overcook the roast but I also don’t want it to be undercooked.
Which directions should I follow?

This was very tasty…gravy great…meat did not slice as in the photo here….broke apart into chunks. Did taste like stewed meat but family did like it. Rump roast tasted like a pot roast ….guess I prefer the rump roast in the over for myself, although family said to make it again.

Oops, sorry, I forgot to say that cut off any extra fat that was still on the roast, used Diet Coke, reduced fat cream of mushroom soup, and non-fat sour cream. It was wonderful, and you can’t tell the difference and didn’t know what you were missing. Also, I didn’t bother browning the roast before putting it in the crock pot. Again, you’re not missing anything by taking out that extra step.

I made this roast for my husband and myself, and since there’s just the two of us, I cut the recipe in half. Not a problem! It turned out amazingly wonderful! I added some fresh mushrooms, also, since I love them. The “gravy” this makes is delish over egg noodles, and when served with some fresh, cooked carrots, makes a well-rounded, yet quick and easy dinner. I even had left-overs for my lunch the next day. Even better!

I am sorry if this is a dumb question, I don’t cook roasts all that often, so this is a bit new to me. I have a 3.5 lb rump roast, how long do I brown it for before putting in the crock? Also, for those of you that have used soup other then mushroom, how does it turn out? I don’t like mushrooms and only have cream of chicken at the house, worried that may alter the taste though.

Years ago I gave up on crock pot cooking because everything tasted liked it was stewed. Ex chicken and beef. Apparently times are different…I never hear anybody saying that….will this recipe taste like its stewed?

If you cook it on low, you need to double the time. So you will cook it for 6-8 hours and then follow the recipe the rest of the way.

Why do you have to slice the beef and put it back in the crock for a couple more hours. Cant you leave it whole..remove it for the next ingredients (sour cream) and put the roast back?

You can cook it on low for 8 hours. If you have a cooker that automatically switches to warm then it will be ready to eat when you walk in the door.

Just now seeing your comment, Jennifer…sorry! I would suggest adding carrots at the beginning. Carrots are one of those veggies that are usually undercooked, not overcooked!

I made this the other day, and I used coffee instead of coke since I didn’t have coke. Coffee does the same thing that coke does for making the roast tender. It was delicious!

Love this recipe. It is similar to another crockpot recipe I have used in the past, but was anxious to add the sour cream to the gravy. Delicious, of course! I did shred the meat this time and used it on open-faced sandwiches with mashed potatoes. I just love your cookbook’s look, the pictures and the recipes are great. This is my new all time favorite roast. I even made it for my Freezer Club co-op. We serve it on bread and with some mashed potatoes and call it Beef Manhattan. Fabulous! It is creamy, but you can always just use a slotted spoon and lift the meat out. I have shredded the meat and refrozen the leftovers for Beef Manhattans another night.

Made this for years minus the sour cream. A favorite at our house and all the friends shared it with. Great with mashed potatoes. If want the gravey thicken put some gravey in pan thicken with corn starch. Any dark cola works, we likke Pepsi.
