This is great on top of shredded lettuce with cheese and sour cream as a taco salad, or filling for tacos, burritos, or on top of nachos for an after school snack. We have even used the leftovers and added chicken broth to make an amazing chicken tortilla soup. So amazingly versatile! Yummy!!

Ingredients

  • 5-6 Boneless, skinless chicken breasts
  • 1 large Jar Chipolte sauce
  • 1 Can Black beans, rinsed
  • 1 Can Corn, not drained
  • 1 small Can Green chilis
  • 1 Medium onion, diced
  • 2 Packages Reduced sodium taco seasoning
  • Shredded lettuce, sour cream, shredded cheese, and taco shells or tortillas for after cooking as you like!

Directions

  1. Step One

    Place chicken on bottom of crockpot and add all of the other ingredients on top.

  2. Step Two

    Cook on low for 6 hours or until the chicken shreds apart with a fork when mixed together.

    I would say the Tabasco Chipotle Sauce would work fine. I would just use one bottle…I agree, 2 would be too much.

    Would Tabasco’s Chipotle Sauce work? It comes in 8 oz. bottles. Seems like two of those would be way too much??

    This turned out awesome. My homemade Chipotle sauce worked like a champ! Served with warm flour tortillas, sticky white rice & some sour cream – delicious! This is the best recipe I’ve tried out so far on the site. It was seriously better than a Chipotle Restaurant Burrito. Perfect game day fare! You girls rock…..

    Joey, it will change the flavor but you can certainly try it. Look for chipotle sauce in the salsa section.

    Question… I am going to make this tomorrow. I prefer frozen corn to canned corn. Do you think it would work ok if I throw in frozen corn?

    Vanessa, the taco seasoning will be plenty of seasoning unless you want to add some pepper.

    Glyna, you can find chipotle sauce on the aisle with BBQ sauce and wing sauce. Size isn’t really too big of a deal, but maybe around 16-20oz.

    This was my first recipe from this website. I have never had any luck with any recipes in my crock pot so I wasn’t expecting much. This was amazing!!! I still can’t believe I made it. We had it the first night as tacos then the second on flat bread. Would make this again. Can’t wait to try another recipe!
