Chili Con Carne

Ingredients

  • 2 Pounds Beef Stew Meat
  • 1 Can Red Enchilada Sauce
  • 1 Can Petite Diced Tomatoes
  • 2-3 Small Potatoes, diced small
  • 15 oz Can Black Beans (optional, rinsed and drained)
  • 1 Pinch Salt and Pepper to taste

Directions

  1. Step One

    Spray crock with cooking spray. Cut stew meat into bite size pieces, add to crock.

  2. Step Two

    Dump Enchilada Sauce, drained tomatoes and diced potatoes (add black beans at this time as well). Stir to coat everything.

  3. Step Three

    Cook on low for 7hours or High 4 hours.Serve in small flour tortillas.

    The missus LOVES this chilli. As I often do, I wound up modifying this recipe just a little. What I used was:

    3 Lbs Stew meat
    1 can “bush’s chilli beans”
    1 can black beans with cumin
    1 can diced tomatoes
    1 can corn
    1 can enchilada sauce.

    Salt, pepper, chilli powder, cumin, and ancho chilli pepper to taste.

    To be clear, though, I was using my 6 quart crock, not my trusty 4-quart.

    The stew meat makes this a chilli that eats like a steak. the big hunks of tasty stew meat are definitely the main thing I love about this dish.

    I switched out the potatoes for corn, because it’s easier than cutting some potatoes for me. The extra beans justify the extra meat, and I make sure to get a BIG can of enchilada sauce and let this tasty beast cook for a good long wile.

    When you’re working with stew meat, I like to add a bit of richer, sweeter flavor. If you can get your hands on some ancho chilli pepper, do it. (We got ours from Penzy’s spices.) The stuff is not too spicy, but it’s got a good rich flavor that’s almost like flaming chocolate.

    All in all, I love this dish because it’s filling, and a large batch will last a long time between the two of us. Thanks so much for this recipe!
