Chicken Soft Tacos – great family meal, slow cooker recipe for chicken soft tacos

Ingredients

  • 1 Pound Chicken
  • 2 Packages Taco seasoning (low sodium)
  • 1 Can Rotel
  • 1 Can Black beans
  • 1 Cup Frozen corn
  • Chicken broth

Directions

  1. Step One

    Put first five ingredients in slow cooker and pour in enough chicken broth to cover everything.

  2. Step Two

    Cook on low for approximately 5 hours or until chicken is cooked through and the house smells AMAZING!

  3. Step Three

    Shred chicken and return to pot.

  4. Step Four

    Serve with warm corn tortillas, cheese, guacamole, sour cream, etc... Super delicious and so easy! Enjoy!

    Loved it, just made and ate it. Followed recipe 90% – didn’t add black beans (didn’t have any) and put packet of chicken taco flavoring. Yummy – would be good with shredded beef too. Entire family loved it (even picky kids)

    Lisa, step one says to use enough broth to cover the food. I’d start with a can of broth and go from there. Enjoy!!!!

    This was easy and delicious! I only used one package of taco seasoning and I used 1 can of Chicken Broth. Just drained the juice at the end. I also drained the beans prior to adding them.

    Next time you cook this, drain the corn and drain and rinse the beans.

    These tasted good, but just like Dynae said they came out soupy. I will have to tweak this recipe next time.

    This turned out great! I only used one packet of taco seasoning. Serve a few different ways (on tortillas, tosadas, over rice or as nachos). I like to add sour cream and just spoon on to tortilla chips. This is a keeper!

    Wonderful!! Hit all the way around. I would leave out the chicken broth mine was too soupy. I added Dry ranch packet to frozen chicken & the rest too. At the end I shredded my chicken & added a cup of sour cream to the mix (I used 3 pounds of chicken & upped the rest accordinly)

    Linda ~ we use boneless and you can use frozen or thawed chicken. If frozen, just crock for about an hour more and make sure your chicken reaches an internal temp of 165 when you poke it with a meat thermometer. cRock on!

    DELICIOUS!I had to omit the beans and corn due to picky ones in my house.. LOL! They were still so good and easy to make! The kids loved them as well! Super plus! :)
