Chicken Pot Roast – Easy and delicious chicken pot roast dinner

Ingredients

  • 1 whole chicken
  • 2 Teaspoons minced garlic (or 4 cloves chopped)
  • 2 Teaspoons ground cumin
  • 1/2 Teaspoon chili powder
  • 1 Tablespoon vegetable oil
  • 4 boiling potatoes, sliced
  • 8 Ounces baby carrots
  • 2 onions thinly sliced
  • salt and pepper

Directions

  1. Step One

    In a small bowl combine the garlic, cumin, chili powder, and 1 tbsp. vegetable oil.

  2. Step Two

    Toss together the potatoes, carrots, and 1/3 of the garlic mixture in slow cooker.

  3. Step Three

    Season with salt and pepper.

  4. Step Four

    Rub the chicken with the remaining garlic mixture, salt and pepper.

  5. Step Five

    Place on top of the vegetables.

  6. Step Six

    Cover and cook on low for 6 hours or until temperature of chicken reaches 165 degrees.

    So glad you liked it, Connie! Here’s an easy fix for ya: roll up little balls of foil and put those in the bottom of your slow cooker. Then you can sit your chicken, carrots and potatoes on top of the foil balls and the grease drains off while it is cooking. Happy Crockin’!

    This makes an incredible tender and moist chicken. The only thing I didn’t like was that the carrots and potatoes cook in the chicken grease. I need to find something that will fit in my crock and allow the chicken to drain under the food. My husband actually complimented me on this dinner.
