Chicken Pot Roast – Easy and delicious chicken pot roast dinner
- 1 whole chicken
- 2 Teaspoons minced garlic (or 4 cloves chopped)
- 2 Teaspoons ground cumin
- 1/2 Teaspoon chili powder
- 1 Tablespoon vegetable oil
- 4 boiling potatoes, sliced
- 8 Ounces baby carrots
- 2 onions thinly sliced
- salt and pepper
In a small bowl combine the garlic, cumin, chili powder, and 1 tbsp. vegetable oil.
Toss together the potatoes, carrots, and 1/3 of the garlic mixture in slow cooker.
Season with salt and pepper.
Rub the chicken with the remaining garlic mixture, salt and pepper.
Place on top of the vegetables.
Cover and cook on low for 6 hours or until temperature of chicken reaches 165 degrees.
