A slightly spicy alternative to stuffed peppers. I combined a few ideas from other recipes and added a few of my own.

Chicken and Tomatoes


  • 3 Chicken breasts (bone in)
  • 1 (large) Can Tomatoes
  • 1 Can Fire-roasted tomatoes
  • Garlic
  • salt
  • Chili powder
  • Optional: onion, potatoes, carrots or other veggies you like.


  1. Step One

    Cover and cook on LOW for 6-8 hours or on HIGH for 4.

  2. Step Two

    Delish and tender chicken - can be eaten plain or in wraps, etc.

    Itisha (pretty name by the way)…use what you like best. Either red or white potatoes would be just fine. Great tweaks, ladies!

    Three pounds of boneless thighs, two cans dice tomatoes, two cans diced potatoes (drained) and and a large sweet onion. Season with garlic salt, seasalt (add more than you think, you’ll need it…trust me) and black pepper, low for 8hrs, serve with white rice. Another favorite and very easy to make.

    Cook on low for 6 hours. With three cans of tomatoes, I would add a little more salt. The beautiful thing about slow cooking it is so forgiving. You can easily add spices at the end to kick it up a bit. Keep Crockin’!

    Im making this for the first time right now. I mixed an onion soup pack (dry) with a little chicken broth and poured it in with the chicken, onion, carrots and diced tomatoes. I didn’t have any fire roasted ones around so we skipped that and also the garlic salt. I figure the soup mix is salty enough and we can add later if needed. Currently its on low. I’m gonna guess 4-6 hrs.
