Chicken breasts with black beans, salsa, corn and cream cheese adapted from a recipe from www.food.com
Ingredients
- 4 frozen boneless, skinless chicken breasts
- 2 Cans corn (drained)
- 2 Cans black beans (drained)
- 1 (15 oz) Jar salsa
- 2 (8 oz) Packages cream cheese
Directions

Step One
Place frozen chicken in the bottom of the slow cooker.

Step Two
Add salsa, corn and black beans.

Step Three
Cook on high for 6-7 hours.

Step Four
Turn to low and add 2 packages of cream cheese. Cook for another 30 min. Stir well, the chicken should break apart easily.

Amy,
You will probably still want to use the same cooking time, but maybe the 4 hours instead of the 6 hours. Just check to make sure the chicken is cooked all of the way through.

I am very new…as in this could be my first attempt…at using a crock pot. This recipe sounds yummy but I would like to cut it in 1/2. Does that affect the cooking time? Sorry, if that is a dumb question but as I stated “newbie!”.

You could use non fat cream cheese or maybe just make a rue and add it at the last minute to thicken it up.

Made this last night – my first Crockin’ Girls recipe! I only used one package of cream cheese and then added some shredded mexican cheese and served it over mexican rice. My husband loved it! I am excited to have it leftover today – I think it will taste better. Great and easy recipe!

I made this today, my first crockin’ recipe, YUM! I made this in the Crock-Pot SCVT650-PS 6-1/2-Quart Programmable Touchscreen Slow Cooker. I decided to cook on low for 10 – 10.5 hours instead of on high because I was at work all day. I used 2 packets of tenderloins from costco instead of full breasts as thats what i had on hand. The chicken was super moist after 10 hours and the house smelled delicious! I did make add some chili powder, pepper and some cayenne pepper and salt to give it a little more flavor. I will use a spicier salsa next time as well ( I put a medium spiced salsa in) as we like a little more kick. This will definitely be a go to for an easy meal! It was crock tastic!

Lee Ann…You can make this with chicken that is not frozen, but you would have to take a couple of hours off of the cook time.

We call this “not for company” because it tastes amazing but does not look pretty! We serve it over rice… yum!
