Taking an old family favorite and making it in the slow cooker y'all! My great grandma, "Big Mama", taught the women in our family how to get around the kitchen and was always making something up for us when we would visit. We really miss her home cooking and this is a perfect way to pay tribute to her!

Ingredients

  • 1 (24-ounce) bag frozen cut broccoli
  • 2 2/3 Cups quick-cooking rice (uncooked)
  • 1 stick butter, cut into pieces
  • 2 Cans cream soup (Big Mama used cream of celery, we used cream of mushroom)
  • 2 (15-ounce) Jars Cheez Whiz
  • 1 Cup onion, chopped
  • 1 Cup celery, chopped
  • salt and pepper, to taste

Directions

  1. Step One

    Add all ingredients to the slow cooker, mixing well to ensure the rice cooks.

  2. Step Two

    Cook on LOW for 6 hours or on HIGH for 3 to 4 hours.

    This is really tasty, but I added 2/3 cup of half & half (sure you could use milk) as mine was a bit dry the first time. I chose to use one can each of the cream of celery and mushroom soups. And I did use 1-1/2 lb. of FRESH chopped broccoli, raw, and it was great.

    Haven’t tried it with fresh. You can try it though. It can cook longer when it starts out frozen Lisa.

    Is there a reason why the recipe calls for frozen broccoli rather than fresh? I prefer using fresh broccoli and was wondering if it would make any difference to the way it cooked.

    I am planning on making this today. Is it okay to substitute 1 stick of margarine for the 1 stick of butter? Also, is it okay to leave out the celery?

    Well, it didn’t work out. It’s a burned gooey mess. Should not have left it on warm overnight. Thought it would have been fine with an hour on low, and 6 on warm. But it’s going in the trash :-(

    This Mama didn’t have any cream soup, so I used 2 cans of evaporated skim milk. We don’t like celery, so I left it out. It smells heavenly, so I pray it turns out by morning, as it’s going on the table!

    If should easily serve about 8-10. You can double it as long as your slow cooker is big enough to handle it.

    You can probably use Velveeta. You will want to melt it down a bit and use some milk to thin it out some.

    Marcene, I think you could add chicken and cook it just the same. I would cut the chicken in smallish chunks or use chicken tenderloins so that they’re thoroughly cooked. Don’t worry about adding any water or anything, either! Yum!

    What would we do different if we wanted to add chicken to this recipe?? would we have to cook the chicken first?? Or can we put in raw and keep on for a longer temp?? Cant wait to try it, looks awesome!!

    this sounds really close to a Thanksgiving staple in my house. Instead of cream of mushroom, I use cream of chicken. And it is AMAZING! I make up a HUGE crock every year, and never seem to get to take leftovers home! lol I highly recommend this one!

    I don’t usually like the texture of Instant Rice. How can I substitute regulare long grain white rice??
