Beef Taco Soup
Ingredients
- 2 Cans Kidney beans
- 2 Cans Pinto beans
- 2 Cans Corn
- 1 Can Tomatoes and chiles
- 1 Can Diced tomatoes
- 1 Package Taco seasoning
- 1 Package Ranch dressing mix
- 1 Pound Browned ground turkey or hamburger
- Shredded cheese and sour cream for embellishment
- 1 Package Tortilla chips
Directions

Step One
Brown meat if you are going to use it, drain fat and add to slow cooker stoneware insert (the meat. not the fat).

Sprinkle seasoning packets on top of meat.

Drain and rinse the beans and add.

Step Four
Add the ENTIRE contents of the corn and tomato cans, stir.

Step Five
Cover and cook on low for 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, opt for cooking on low.

About 20 minutes before serving, add desired amount of crushed chips into the slow cooker.

Step Seven
Then, stir well, and serve with a handful of shredded cheese and a dollop of sour cream.

Jessica ~ yes you do use the whole packet of ranch :)
And Brenda ~ you can always add a little beef broth to the pot if it’s not as “soupy” as you like. We always encouraged folks to tweak the recipes to their own taste :) cRockin’ Roll!!

I am making this and am a little concerned that there isn’t much liquid.
Doesn’t seem like soup otherwise, but I am going to wait and see. Love all the recipes we have tried so far!

This is a great soup, although mine came out more like a taco chili. This will definitely be a “go-to” dinner for me when time is short and everyone is running to and from practices. Highly recommend!
