Micki’s Pot Roast – Easy pot roast dinner made simple in the slow cooker
I picked tons of homegrown apples and had so many leftovers, so decided to try this concoction.

Apple Pot Roast – Recipe for the slow cooker.
- 1 Medium sized top round roast
- 1 Whole yellow onion chopped
- 2 Ribs celery chopped
- 1 Can Beef broth
- 1 - 2 Apples of your choosing
- 2 - 3 Cloves of garlic minced
- 1 Package Baby carrots
- Small new potatoes or red potatoes
Season the roast with salt and pepper.
Sear and brown the meat on all sides in a large pan with 2-3 Tbsp Olive Oil.
After the meat is seared, set aside in the crock pot or on a platter.
In the pan, add in onion, celery and garlic, sauteed to soften.
Add in beef stock and stir to get all the meat juices off the bottom of the pan, then pour into your slow cooker.
Add in potatoes and carrots. Nestle the roast in the veggies.
Poke holes in the apple(s) with a fork or knife. Place on top of roast.
Cook on low temp 8-10 hours.
