Apple Pot Roast – Recipe for the slow cooker.
Ingredients
- 1 Medium sized top round roast
- 1 Whole yellow onion chopped
- 2 Ribs celery chopped
- 1 Can Beef broth
- 1 - 2 Apples of your choosing
- 2 - 3 Cloves of garlic minced
- 1 Package Baby carrots
- Small new potatoes or red potatoes
Directions

Step One
Season the roast with salt and pepper.

Step Two
Sear and brown the meat on all sides in a large pan with 2-3 Tbsp Olive Oil.

Step Three
After the meat is seared, set aside in the crock pot or on a platter.

Step Four
In the pan, add in onion, celery and garlic, sauteed to soften.

Step Five
Add in beef stock and stir to get all the meat juices off the bottom of the pan, then pour into your slow cooker.

Step Six
Add in potatoes and carrots. Nestle the roast in the veggies.

Step Seven
Poke holes in the apple(s) with a fork or knife. Place on top of roast.

Step Eight
Cook on low temp 8-10 hours.

I think the question is not what is beef stock, but what kind of quantity is a ‘package’? Does that mean a cup? A 14.5 oz. can? Not clear…. Thank you!

Lisa, sorry your roast turned out dry. Make sure you keep the lid on the whole cooking time. Your slow cooker may also cook hot.

Chlois ~ It’s like a meat flavored juice you get when you simmer various ingredients in water such as meat, bones, herbs and spices. You can make your own chicken or beef stock this way or you can buy it already made on the soup aisle in the grocery store if you don’t want to make your own. We like to use the *low sodium* beef or chicken stock.
