After Hours Soup

Ingredients

  • 1 (16oz.) Package Italian Sausage, cut into bite size pieces
  • 2 Cups Diced potatoes
  • 1/2 Cup Cooked and crumbled bacon
  • 1 (14.5 oz) Can Diced tomatoes
  • 4 Cups Chicken broth
  • 2 Teaspoons Chopped garlic
  • 1 Package Hollandaise sauce mix, Knorr brand
  • 4 Eggs, scrambled
  • Salt and Pepper, to taste
  • 2 Cups Large croutons
  • Tabasco sauce, optional

Directions

  1. Step One

    In a 4 quart slow cooker, combine sausage, potatoes, bacon, and tomatoes.

  2. Step Two

    In a medium bowl, whisk together chicken broth, garlic and Hollandaise sauce mix.

  3. Step Three

    Pour into slow cooker and stir thoroughly.

  4. Step Four

    Cover and cook on HIGH setting for 4 hours.

  5. Step Five

    Slowly stir in scrambled eggs and adjust seasoning with salt and pepper.

  6. Step Six

    Top with croutons and serve hot with tabasco sauce if desired.

    This sounds fabulous. But I am curious about the sausage. I assume you mean cooked sausage. Am I wrong? Want to make this, but don’t want to mess it up. Lol.
