After Hours Soup
Ingredients
- 1 (16oz.) Package Italian Sausage, cut into bite size pieces
- 2 Cups Diced potatoes
- 1/2 Cup Cooked and crumbled bacon
- 1 (14.5 oz) Can Diced tomatoes
- 4 Cups Chicken broth
- 2 Teaspoons Chopped garlic
- 1 Package Hollandaise sauce mix, Knorr brand
- 4 Eggs, scrambled
- Salt and Pepper, to taste
- 2 Cups Large croutons
- Tabasco sauce, optional
Directions

Step One
In a 4 quart slow cooker, combine sausage, potatoes, bacon, and tomatoes.

Step Two
In a medium bowl, whisk together chicken broth, garlic and Hollandaise sauce mix.

Pour into slow cooker and stir thoroughly.

Step Four
Cover and cook on HIGH setting for 4 hours.

Slowly stir in scrambled eggs and adjust seasoning with salt and pepper.

Top with croutons and serve hot with tabasco sauce if desired.
