What is the purpose of the egg whites? I noticed that this recipe calls for 2 egg whites beaten. Does this mean loosely with a fork or whipped stiff? Do these egg whites cook during the 2 1/2 hour time on low? I have never put egg whites in my mashed potatoes.
This sounds like a great dish to make ahead and take to family meals. Since I have to travel 1 to 2 hours I can lock the lid down and it will stay warm.
