Cooking in 18qt Nesco

I (along with MIL and 2 SIL) have to provide a breakfast for approx. 40 people, adults and children. I would like to find a recipe that can be prepared a night or two in advance. We camp at a relatives house so ovens are limited to two. I thought I could do something in my 18qt Nesco. Do you have any suggestions? Can I adapt any of the breakfast recipes on this site? Cooking times and temps? THANKS!!

WOW!! 40 people…that’s a lot!! You go girl!! Here’s an easy breakfast casserole with not a lot of fuss. I would just triple the recipe, since we normally make it in our 6 quart crock and not an 18…LOL :) Happy Crockin’ Campin’.

And this one is one of my absolute faves!! There are a few more ingredients involved, but it is deeelish! I LOVE it in the morning with a hot cup of coffee or after dinner with some ice cream :) ENJOY!
