Here is the menu I cooked up for our camping vacation with 14 friends and family this week!

Wednesday Night: Crockin’ Lasagna
Thursday Morning: Waffles & Baked Fruit
Thursday Lunch: Sandwiches
Thursday Dinner: Hot dogs (already grilled, just throwing in the crock to warm up) Chili in the other crock & cheese dip in another
Friday Morning: cereal, oatmeal, toast (fend for yourself morning)
Friday Lunch: Tunafish sandwiches
Friday Dinner: Mexican Chef Salad
Saturday Morning: Breakfast Burritos
Saturday Lunch: Eating those leftovers UP!
Saturday Dinner: Crock the crowd favorite King Ranch Chicken
Sunday Morning: Eggs, toast, & fruit
Sunday Lunch: Sandwiches
Sunday Dinner: Hamburgers

Hey y’all here is my 2-week meal plan!  As these summer days seem to either drag on forever or go so fast with too many activities to keep up with! I hope this helps your life too.

Week 1

We are all about comfort this week as we get through the hustle and bustle the week has in store.  These home style comfort foods are sure to help you through the week too

SUNDAY: King Ranch Chicken

The Shopping List:

3 cups shredded cheese
18 eggs

5 small to medium onions
1 bunch celery
1 small package of fresh baby spinach leaves
2-3 medium potatoes
1 bell pepper
1 jalapeño
1 purple onion
3 small yellow onion
1 large onion (your preference)
½ cup fresh chopped mushrooms (optional)

1 pound boneless chicken thighs
½ to 1 whole chicken (3-4 large boneless skinless chicken breasts)
3-4 pounds lean ground beef
1 (8 ounce) package of diced ham
1 pound breakfast sausage
1 Pound of Eckrich smoked sausage, sliced (or your favorite brand)

1 small can tomato soup
1 package chocolate almond bark
2 cans diced tomatoes with green chilies (Rotel)
1 can cream of mushroom soup
3 cans cream of chicken soup
1 can chicken broth
1 package corn tortillas
1 can of pineapple chunks
1 jar of sweet and sour sauce
1 tablespoon of Tabasco sauce
18 ounces of Sweet Baby Ray’s BBQ Sauce
1 can of dark soda (Dr. Pepper)
1 (10-oz.) can of mild red enchilada sauce
28 ounce can sloppy joe sauce

1 bag corn tortilla chips
1 (14 ounce) bag of frozen mixed veggies
1 (32 ounce) package diced frozen hash browns
1 tube refrigerated biscuits
1 package buns for sloppy joes

onion powder
2 Tablespoons brown sugar
2 Tablespoons vinegar
2 Tablespoons prepared mustard
1/2 cup ketchup
1 Tablespoon worcestershire sauce
garlic powder, to taste
cumin, to taste
